Jamacian Jerk Pub Style Wing Sauce?

    Does anyone know how to make the jamacian jerk sauce served on the wings at many pubs? Specifically Cat & Fiddle Pub in Port Coquitlam or Kelly O'Brians in Kelowna?

    I've learned how to make it on my own however my receipe ends up being a bit more runny of a sauce then the pubs which is a bit thicker.

    My Ingredients so far:
    Vinager
    black pepper
    scallions
    onions / garlic
    jalepenos
    red pepper flakes
    salt and all spice
    soy sauce and veg. oil

    Judging from your recipe you should use a little less of vinegar and use olive oil instead of veggie oil. You should also try using the tabasco or buffalo wing sauce and alter that.

    ^Olive oil is less flavour neutral.

    Decrease the amount of vinegar or reduce it on your stove top. Adding flour or cornstarch would also help thicken the sauce.

    ^yup but makes good base for him to add flavours too.
